Preparation of fruit spreads:
Put a small plate in the freezer for the gel point test. For 1 kg of chopped fruit or 600 ml of cold juice sprinkle in the Konfitura bag content while stirring. Add 4 tablespoons of lemon juice or 3 g of citric acid and 300 g sweetener. For liquid sweeteners, the amount is to be calculated according to the dosed mass. Bring everything to a boil while stirring. Leave to simmer for 3 minutes while stirring constantly.
For new recipes / fruits only stir a small amount of fruit (eg 500 g) with half a bag of Konfitura (about one heaped tablespoon), boil and check consistency to determine the exact dosage in advance.
Gel point test:
Put two tablespoons of hot cooked mass onto the prepared ice-cold plate and check the consistency. Re-dosage: Let mass completely cool, sprinkle Konfitura in it and prepare as described. Again, take a gel point test. Immediately fill hot cooking mass into hot flushed and well drained glasses. Seale with twist-off lids. Turn glasses upside down for about 5 minutes (Vacuum forming).
Konfitura does not contain preservatives and therefore has no influence on the expiration date. The use of sugar (conserved and binds water), perfect fruits and the cleanliness of the glasses in the preparation can extend the expiration date. Adding non cooked ingredients shorten the expiration date. Therefore, rather fill the fruit mass in smaller glasses. Once opened, store the jars in a cool place. Jam may become cloudy.
