How to melt chocolate-couverture? It can only melt perfectly in a warm water bath. Procedure: Heat the pan of water. Add the finely chopped couverture in a heat-resistant dish, put in the pot and allow to melt. Important: In the bowl no moisture may enter, otherwise it is determined immediately. The optimum melt temperature is 40 °C - 45 °C.
